  6. When your 20 minutes are douse them in shredded cheese! And put back into the oven for another 5 minutes.
  7. Once your cheese is nice and melted let them sit for about 5-6 minutes before serving.

Pour any remaining sauce over the top of the enchiladas. Sprinkle the cotija cheese over the enchiladas. Brown meat and onions in large skillet. How to Make Easy Beef Enchiladas: Heat oil in a large skillet, and add a pound of ground beef. Break the meat apart and let it brown.
