  1. Prepare 1 1/2 lbs imitation crab meat
  2. Make ready 2 cups shredded Mexican cheese

  6. Take 2 tsp butter
  7. Prepare 1 small diced onion

  1. Preheat oven to 350
  2. Melt butter in deep skillet
  3. Add onion, crab and any salt and pepper. Saute till onions are clear
  4. Add cilantro, sour cream and 1 cup cheese
  5. Blend together and add any hot sauce
  6. Split into 4 tortillas and wrap up
  7. Place in baking dish, cover with enchilada sauce and rest of cheese
  8. Bake for 25-30 minutes.
