This Mexican burger is inspired by Jeff Novick's veggie burger line. It's a delicious, kid-friendly, and healthy alternative to greasy beef burgers. Add cornmeal, salsa, veggies, and rice to bean bowl. Mix everything together so there is an even consistency.

Instructions to make Black Bean Burgers (Mexican style):
  1. Preheat oven to 375 F. Spread beans evenly onto a lined baking sheet & bake for 15 mins until slightly dried out (this is important to reduce mushiness of the beans)
  2. Meanwhile saute olive oil, red pepper, mushrooms, green onion & minced garlic until soft. Gently blot some of the moisture out.
  3. Place sauteed mixture in a large bowl with the remaining ingredients (except beans). Stir together & then add the black beans. Mash with a fork, leaving some larger chunks of beans.
  4. Form into patties. Bake at 375 F for 10 mins each side or grill 8 mins each side. Melt cheddar or Monterey Jack cheese on top.

Add cornmeal, salsa, veggies, and rice to bean bowl. Mix everything together so there is an even consistency. Feel free to do this with your hands. This black bean burger is actually the first black bean burger I've ever made and ever tasted! I thought it turned out great, but waited for my husband to WARNING: This recipe yields A LOT (totally my fault) so be prepared to eat burgers for a few days or just freeze the mixture 🙂.
