  3. Add garlic and chicken. ***I cheated and used a can of organic chicken, due to lack of planning ahead, and it still came out absolutely delicious. I do recommend using fresh chicken, but sometimes it's nice to have an easy substitute!
  4. Once onions (and meat, if applicable) are cooked, add soy sauce, teriyaki sauce, and peas and carrots. Stir and let simmer for about 2 more minutes.
  5. When cooking fried rice with actual rice, it's best to use rice that has been refrigerated overnight. The great thing about quinoa is that I only left it in the fridge for about 30 minutes, and that was all it needed!
  6. So now… add that quinoa to the rest of the ingredients. I pressed down on the mixture with a spatula to add a little last-minute crispiness.
  7. Add salt and pepper, to taste. I barely used any salt, the soy sauce is salty enough.
  8. Remove from heat, and try not to eat everything at once, because it is addicting!!
