The ingredients needed to make Spinach Pulao:
  1. Make ready 2 handful baby spinach
  2. Get 1 1/2 cup sona masoori rice(or any other rice)
  3. Take 3 1/2 cup water
  4. Get 1 inch ginger
  5. Prepare 5-6 garlic pods
  6. Prepare 2 tbsp oil + 1 tsp oil
  7. Get 2 tsp ghee
  8. Make ready Whole spices (2 cloves, 1 cardamom, 1 inch cinnamon stick, 1 star anise, 1 stone flower)
  9. Prepare 5-10 split cashews
  10. Prepare 10-15 mint leaves
  11. Prepare 1 onion sliced
  12. Get 5-6 stem coriander leaves
  13. Take 1 small tomato chopped
  14. Prepare 2 green chillies slitted
  15. Get 1 1/2 tsp red chilly powder
  16. Make ready Salt as required
  17. Prepare drops Few lemon
Instructions to make Spinach Pulao:
  1. Wash and soak the rice for 30 mins
  2. Heat a pan with 1 tsp oil, add spinach and sauté until it becomes soft. Cool it and grind it along with garlic and ginger.
  3. Heat a pressure cooker with oil and ghee. Add all whole spices and cashews. Let it splutter. Add onion and green chillies. Sauté until it becomes soft. Add ground paste and sauté until raw smell goes. Add mint and coriander leaves and sauté for few mins. Add tomato and sauté until it becomes soft. Add chilly powder and salt.
  4. Add water and rice. Add few lemon drops. Pressure cook it for 3 whistles.
  5. Enjoy with onion raita!
