  1. Slowly render bacon fat in a large, tall saute pan until browned and crispy. Remove with a slotted spoon and pat dry on paper towels. Set aside.
  2. Add onion and sweat for 2 minutes.
  3. Add garlic, pepper flakes, and a small pinch of salt. Sweat until garlic is caramelized and fragrant, about 30 seconds to 1 minute.
  4. Cook gnocchi is salted boiling water for approximately 2 minutes or until gnocchi floats. Drain. Set aside.
  5. Add butter. When butter is melted, add flour and whisk. Add milk. Whisk. Cook on medium heat while stirring for 2-3 minutes. Color will turn slightly golden.
  6. Add cheese while whisking. Add a tiny pinch of salt and a large pinch of black pepper. Cook 1 minute.
  7. Combine parsley and breadcrumbs with a pinch of pepper.
  8. Add gnocchi, bacon, olive oil, and lemon juice. Stir to combine. Top with breadcrumb mixture. Sprinkle parmigiano across the top. Bake at 350° for 20-25 minutes or until cheese is bubbling and breadcrumbs have caramelized.
