  4. Mix sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk. Mix well.
  5. Beat egg whites until stiff peaks form, mix in 1/4 cup of sugar. Add to sweet potato mixture.
  6. Put mixture into pie crust and bake at 400°F for 10 minutes and then reduce heat to 350°F until firm and toothpick or knife comes out clean.
