  1. Make ready Butternut Squash
  2. Take 1 Onion ( Finely Chopped )                                    -
  3. Prepare 5 pods Garlic - ( Finely chopped )

  6. Make ready Vegetable broth Chicken stock /
  7. Take 1 inch Cinnamon -
  8. Get 1 tspn Curry Powder - (Optional )
  9. Prepare to taste Pepper Powder

Steps to make Butternut Squash Soup:
  1. Peel the skin, remove the seeds from the squash and cut them into cubes
  2. Heat butter in a saucepan and add  cinnamon and  onion once hot. Saute for a couple of minutes until onion turns translucent
  3. Add little amount of salt and curry powder and give it a nice mix
  4. Drop the squash chunks and garlic  into the sauce pan
  5. Add half a cup of water, mix well and close the pan with a tight lid for about 15 minutes until the squash gets tender
  6. Pour 2 cups  veg / Chicken stock and cook for couple of minutes
  7. Turn off the flame and let the squash cool for sometime
  8. Once cool blend the squash either with a hand blender or  a food processor into a smooth mixture
  9. Once again heat the soup for about 5 minutes. Add  stock if the soup is too thick
  10. Sprinkle pepper powder to taste and check for salt
  11. Once done transfer to a serving bowl and garnish with finely chopped parsley or cilantro and serve hot.
