Reduce the heat back to medium and simmer partially covered for about 30-35 minutes. Season your soup with salt, pepper and add some sugar to taste. Remove from the heat and allow it to cool.
  5. When the soup base is cool, transfer the mixture to a blender and puree until smooth. Using a sieve over a large bowl, strain the tomato puree if needed. Return the puree to the pot and reheat over medium heat.
  6. Whisk the heavy cream, stir, garnish it with fresh basil and enjoy!
